BREAD WITH SOUL
The story starts with a hike through northern France, where provisions are acquired, not from large grocery stores, but from family-owned village bakeries, cheese mongers and butchers. Intrigued by this rich, noble culture and the quality of food tied to it, our eventual head baker, Dusan, returned home and got to work in the family kitchen, trying to replicate that inspiring loaf that had nourished him on his hikes.
To feed this curiosity, he got a job at a bakery in central Illinois where the volume of product and the freedom to explore helped mature his craft. A chance meeting with a cute, blue-eyed girl, Carissa, at the farmers market, who was also interested in sourdoughs, led to a wedding, several children, and the birth of the bakery, Katich Breads. It was through the sacrifice of many family members that got us to where we are today. Throughout the years, the craft has continued to develop, friends/employees have come on board to help move it along, and a relationship has grown between ourselves and the communities we serve. Like bread, amazing things come from a little bit of culture.
